Oh my goodness, these are GOOD! You can make these muffins, put them in a sealed container, and have an easy breakfast for the rest of the week. My family of little and big boys loves them!

Instructions

Things You'll Need:

  • 1 1/2 cups pancake mix
  • 1/4 cup flour
  • 1/2 cup sugar
  • 1/2 cup chocolate chips
  • 2 large eggs
  • 2-3 very ripe bananas
  • 1 teaspoon cinnamon
  • 1 stick of melted (yet not hot) butter
  • two mixing bowls
  • a mixing spoon
  • 12 ct. muffin pan
  • muffin/cupcake papers 12 (optional)
  • if you don't have the above papers, you should have some extra oil or some spray oil to coat the muffin pan
  • oven
  1. Step 1

    Preheat oven to 350 degrees.

  2. Step 2

    Assemble all needed ingredients and utensils.

  3. Step 3

    Combine dry ingredients in one mixing bowl. (pancake mix, flour, sugar, cinnamon)

  4. Step 4

    Mix dry ingredients thorougly using your spoon (or a whisk).

  5. Step 5

    Put bananas in your other mixing bowl and smash them with either your fingers, a fork, or a smasher.

  6. Step 6

    Add your butter and eggs and blend thorougly.

  7. Step 7

    Add wet ingredients to the dry bowl. Also add your chocolate chips.

  8. Step 8

    Blend the ingredients just until all is moist. Do not over-mix because this will cause your muffins to be tough and chewy.

  9. Step 9

    Either put your paper wrappers in the muffin slots (or grease the muffin holes).

  10. Step 10

    Take a large spoon (the one you used to stir) and equally fill the paper wrappers (or greased muffin cups) with your batter.

  11. Step 11

    Carefully put your muffin tray in the oven and bake for 22-24 minutes.

  12. Step 12

    Check if your muffins are done by pressing the top gently. If the top bounces back (and you've cooked at least 22 minutes) your muffins are done.

  13. Step 13

    Now, take them out of the oven and allow to cool for five minutes.

  14. Step 14

    Once cool you may remove them from the muffin pan to a plate to serve, or to a tupperware container to keep for the week!
