Step 1
Clear aside a space on the countertop big enough to fit every pot, pan, and bowl you’re going to use in the course of the cooking.

Have good tools. This means have more than one measuring cup, more than one mixing bowl, more than one pot and pan, etc.

Make sure you have everything, and pull out every ingredient beforehand, laying them within easy reach. Nothing frazzles even the most seasoned cook like dashing to the fridge to grab the eggs you forgot you needed, or needing to run to the store when the meal is half-cooked.

Don’t just dump the batter-covered pan in the sink. Hold it under running water, and take a quick sponge to it. Less than a minute of cleaning it right after using it is a lot better than 5 minutes cleaning it later.

Skip the sink. Clear out the dishwasher before cooking, and instead of putting the cooking gear in the sink, put it right in the dishwasher. Kick it on before serving the entrées and let it work for you while you enjoy your meal.

Most importantly – slow down! Be calm, organized, and attentive, and you’re much less likely to make mistakes that’ll spell the difference between heavenly brownies, and brown bricks.
