Step 1
Ground Beef: Substitute frozen products such as Boca Burgers or Grillers. Make your own using mashed beans and spices or TVP (textured vegetable protein). These products can be formed into patties, crumbled into chili, spaghetti sauce, stuffed bell peppers, on pizza, etc.

Step 2
Chicken: You can make chicken substitutes from scratch using gluten. Many stir fry or one dish recipes will easily accommodate sliced mushrooms in place of chicken. We usually just leave the chicken out and follow the recipe otherwise. Morningstar Farms® Meal Starters™ Chik'n Strips contains no animal products and we use it in chicken wraps (heated Chik'n Strips with shredded lettuce, diced onion and tomato, soy bacon bits, vegan mayo all rolled up in flour tortilla).

Step 3
Pig (Pork and Ham): Soy bacon bits work well on BLT's, in salads and in chili to give it a smoky flavor, Morningstar Farm Meal Starters Sausage Crumbles work well in spaghetti, stuffed bell peppers, italian dishes, pizza, etc. There are recipes for making bacon out of gluten but we aren't satisfied with how it turns out.

Step 4
No Meat: Many dishes can easily eliminate the meat from the recipe. Our favorites are Marinara Sauce for Pasta, Stir Fry Veggies and Rice, Bean Chili, Bean Tacos, Peppers stuffed with Rice and Vegetables, Pizza.

Step 5
Cheese: Soy cheese is available but we prefer to make our own. Experiment using Nutritional Yeast, Braggs Liquid Aminos and simple white sauces with flavorings. You're trying for creamy with some tang.

on 12/13/2008 This is a pretty neat article. I once ate at this restaurant in Irvine, CA called "The Veggie Grill". They had the same substitutes you mentioned, and it tasted just like the real thing. 5* for you!
