How to make a rissole

You'll learn to make a rissole, which is like a croquette or burger

Instructions

Things You'll Need:

  • A heavy frying pan
  • A mixing bowl
  • sharp paring and slicing/chopping knives
  • a fork
  1. Step 1

    Assemble these ingredients:

    12 oz ground beef
    3 oz dry bread-crumbs
    4 oz chopped onion
    3 cloves peeled, finely chopped garlic
    1/2 tsp each thyme, marjoram and paprika
    1/4 tsp each mace, salt and pepper
    1/8 tsp hot chili powder or cayenne flakes (more or less as preferred)
    one egg
    1 Tbs evo oil

  2. Step 2

    Place all ingredients except the egg in a bowl and mix them roughly together. Make an indentation in the middle and break the egg into this. With a fork beat the egg and slowly incorporate it into the meat mixture. Mix only until the egg is no longer visible or the mixture will toughen. Form into four patties. Dust very lightly with flour. Cook immediately or the flour will dampen.

  3. Step 3

    Heat a frying pan and add the evo oil. When you see the oil become wavy and lightly smoke add the patties one at a time, tipping them away from you to avoid splashing yourself. Fry on each side for about 3 to 4 minutes or more for well done. Do not keep flipping them or pressing them as they fry. Constant flipping stops browning and pressing them pushes the juices out and makes them dry.

Tips & Warnings
  • Serve with boiled, mashed or baked potato and boiled, minty peas or par boiled beans.
  • Dull knives cause injuries, always keep your knives sharp
  • Tip the rissoles away from you when putting them in the pan to avoid burns from splashing
