This garlic-olive spaghetti recipe is a favorite in my home. Whether it be served for a family meal or romantic dinner, this entree is perfect to eat on any occasion.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 16 oz cooked spaghetti
  • 10-12 minced cloves garlic
  • 1/2 cup olive oil
  • 1/4 cup fresh minced parsley
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 cup Spanish Manzanilla olives(minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Parmesan cheese to taste
  1. Step 1

    In a skillet, pour 1/4 cup olive oil and garlic. On low heat, lightly brown the garlic stirring occasionally (be careful not to over brown the garlic, which will result in a burned, bitter flavor). Turn off heat.

  2. Step 2

    Mix in the oregano, thyme, salt, garlic powder, pepper, olives, and parsley. Add the remaining 1/4 cup olive oil and stir.

  3. Step 3

    Pour the olive oil mix over the spaghetti. Toss the spaghetti until it is evenly coated.

  4. Step 4

    Sprinkle Parmesan cheese to taste as desired.

Tips & Warnings
  • Can be served hot or chilled. Delicious either way!

on 2/20/2009 In Italy it's called: pasta aglio e olio (e peperoncino, if you used also some chile pepper). I like the herbs you put in it and the olives too. Nice touch!
