How to make REAL newyork cheese cake

Who doesn't love cheese cake? Well, the New Yorkers really had something when they invented this.

Difficulty: Moderate
Instructions

Things You'll Need:

  • Filling-
  • 1/4 cup whipping cream (heavy if you wish)
  • 2 egg yolks
  • 4to 5 eggs (just enough to make 1 cup)
  • 1/4 teaspoon salt
  • 3 tablespoons all purpose flour
  • 1 3/4 cups sugar
  • 3/4 teaspoon lemon peel (grated)
  • 1/4 teaspoon vanilla flavoring
  • 5 (8 ounces) pakages cream cheese
  • Home made crust-
  • 1 cup all- purpose flour (sifted)
  • 1/4 cup sugar (regular)
  • 1/2 cup butter (salted or non it really is a matter of prefference)
  • 1 slightly beated egg yolk
  • 1/4 teaspoon vanilla flavoring
  1. Step 1

    Making the crust. Combine the first three ingrediients (flour, sugar, and lemon).

  2. Step 2

    Cut in the butter slowly until the mix starts to crumble, then add the yolk and vanilla flavor. Blend thoroughly.

  3. Step 3

    Pat 1/3 of the crust dough on the bottom of a nine inch spring-form with the sides removed.

  4. Step 4

    Bake in a hot oven at 400 degrees for eight minutes untill the the crust is a golden brown; cool.

  5. Step 5

    Butter sides of pan then attach to the bottom and pat the remaining dough on sides. You are going to want the sides to be 1 3/4 inches high.

  6. Step 6

    Turn the oven up to 450 degrees and place a 9x13 inch thing of water on the bottom of the oven. This helps the filling of the cake stay creamy. The sides will not bake right if the cheesecake is placed in a water bath.

  7. Step 7

    Now we make the filling. I LOVE the filling! First start by beating the sofened cream cheese untill it is creamy then add the vanilla.

  8. Step 8

    Now we are going to gradually add the next four ingredients, (lemon, sugar, flour and salt). IMPORTANT! Be sure, when you add the flour and lemon together that the lemon is coated in the flour.

  9. Step 9

    Now add the eggs and egg yolks all at once, beating after each just to blend. Then stir in the whipping cream gently. I cannot stress gently enough, when you work with cheese cake it is such a delacat thing.

  10. Step 10

    Now pour your filling into the crust and bake at 450 for 12 to 15 minutes then reduce the heat to 300 degrees and countinue to bake for an hour. It may need a bit longer because of the water but, that does not mean that you would not use the water.

  11. Step 11

    Remove from oven- cool. Loosen the sides with a spatula after a half hour. Remove siades at end of 1 hour.

Tips & Warnings
  • If the cake is getting to brown cover it with foil with a hole cut in the middle, it will help the middle cook better.
  • This amazing cake is at it's peak when it is refrigerated overnight.
