How to Make My Minestrone soup

I love this dish. It's comforting, filling and so delicious.

Instructions

Things You'll Need:

  • 2 carrots
  • 2 stalks of celery
  • 4 cups of chicken broth
  • 2 bay leafs
  • salt and pepper to taste
  • olive oil
  • 1 box of mini shell pasta
  • A few leaves of Escarole or Spinach leaves(rinsed and drained)
  • 1 can of cannaloni beans
  • Fresh shaved Parmesan Cheese
  1. Step 1

    Take a large pot. Add olive oil and all your diced celery and carrots and allow to cook for about 10 minutes.

  2. Step 2

    Now add in your chicken broth, escarole or spinach, salt, pepper and bay leafs. Take your beans , drain and rinse them under cold water and add to the pot. Simmer on low heat for about 30 minutes.

  3. Step 3

    Now add in your pasta and cook for 7 minutes. Turn heat off and scoop out generous amounts into serving bowls. Add shaved parmesan and serve with toasted garlic bread, enjoy!
