This orange pound cake is delightfully light enough to serve after any meal. Lots of citrus flavor in the syrup and cake.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2+1/2 cups unbleached all-purpose flour
  • 1+1/2 cups granulated sugar
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup orange juice
  • 3/4 cup oil
  • 1 tsp vanilla
  • 1 tsp orange extract
  • 2 Tbs orange rind
  • 4 eggs
  • Bundt or tube pan
  • 1+1/2 cups 10x sugar
  • 1/2 cup orange juice
  1. Step 1

    Preheat the oven to 325 degrees and generously grease and flour a Bundt or fluted tube pan. Set aside.

  2. Step 2

    In a large bowl, combine the flour, granulated sugar, baking powder, salt 3/4 cup orange juice, oil, extracts and grated orange rind. Blend the ingredients on low speed until all ingredients are moistened. Now beat the batter on medium speed for 3 minutes more.

  3. Step 3

    Pour the batter into the prepared cake pan and bake for 40-50 minutes or until done. Test by sticking a toothpick on the center; if it comes out clean then cake is done. Let the cake cool for about 10 minutes, before removing from the pan. Place cake on a large plate.

  4. Step 4

    In a small bowl, mix powdered sugar and 1/2 cup orange juice. Now slowly pour the sugar mixture over the warm cake, allowing much of the syrup to be absorbed. When cake is completely cool, can lightly sprinkle confection sugar on the top of the cake.

Tips & Warnings
  • If using self-rising flour omit the baking powder and salt.
  • Use a plate with at least a 2 inch border or curved/deep edge to collect syrup until it is absorbed.
  • If you prefer, you can use 3 drops of yellow and 3 drops of red food coloring to make the cake orange in color.
