With the cold days of winter coming in, what better meal than a warm bowl of vegetable soup? Here is a simple recipe on how to make it homemade, and trust me, you will not be disappointed. And do not forget, it is healthy as well. Does this Spark an idea?

  • 3 cans of veg-all
  • can of peas
  • can of white and yellow corn
  • big can of tomato juice
  • can of diced tomatoes
  • can of Libby's corn beef
  • beef tips and chicken breast

      Vegetable soup can be great for lunch, or dinner, and is great leftover. To start making homemade vegetable soup, cut up all the meat into small pieces. I prefer to cut in small chunks, almost as if you are shredding it to the same consistency of chopped barbecue.

      Now mix together all of the vegetables, juice and all, into a large stock pot. Although I did not list in the ingredients, I sometimes add green beans to the soup.

      To flavor, add salt, pepper, and a little sugar to taste. After heating up a little, add the meat and cook on high until it comes to a boil.

      Now that it has come to a boil, reduce heat to medium and allow to cook for around 2.5 to 3 hours to make sure the meat gets cooked all the way through. If you plan on saving the soup for leftovers, make sure it has had plenty of time to cool before you place it in a container for the refrigerator or freezer. Also remember, this goes great with a grilled cheese sandwich!
