Make a Quick, Easy Cucumber Salad

A lovely, chilled cucumber salad to go with most anything.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1-2 cucumbers depending on size
  • large, heaping tablespoon mayonaise
  • 1 teaspoon vinegar
  • 1/2 teaspoon sugar
  • black pepper
  • garlic powder
  • onion powder
  • salt
  1. Step 1

Peel and slice cucumbers into a bowl. Add a generous sprinkling of salt and onion powder. Toss well.

  2. Step 2

Put into the refirgerator three or four hours or overnight until the juice is being released from the sliced cucumber.

  3. Step 3

Remove from refrigerator, pour off a bit of the liquid if it seems a lot, but leave most of it in.

  4. Step 4

Then add a large, heaping tablespoon of mayonaise, 1 teaspoon vinegar, 1/2 teaspoon sugar and sprinkle with black pepper and garlic powder.

  5. Step 5

Mix well. Your salad is prepared.

on 10/22/2008 This sounds really good and easy; I make a Japanese style cucumber salad, but I've never thought of the mayo. Thanks for sharing!
