Yummy Cheesy Vegetable Medley for vegetarians or just a nice add to a meat dish.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 700g/1 1/2 cauliflower florets
  • 375g/13oz broccoli florets
  • 1 tbsp olive oil
  • 225g/8oz streaky bacon
  • 25g/1oz butter
  • 25g/1oz plain flour
  • Pinch of English Mustard powder
  • 300ml/ 1/2 pint dry white wine
  • 150ml/5fl oz double cream
  • Salt and Black pepper
  • 100g/4oz Cheddar cheese
  • 3 tablespoons chopped fresh parsley
  • 75g/30oz fresh breadcrumbs.
  1. Step 1

    Bring a large pan of water to the boil. Add the cauliflower and broccoli florets and cook for 10 - 15 minutes, or until tender.

  2. Step 2

    Drain and wipe out the pan.Set the vegetables aside.

  3. Step 3

    Heat the oil in the pan and fry the bacon on paper towel, then snip into small pieces. Set aside.

  4. Step 4

    Melt the butter in pan. Stir in flour and mustard. Cook for one minute.

  5. Step 5

    Remove from the heat and gradually blend in the wine. Return to the heat and bring to boil, stirring, until thickened.

  6. Step 6

    Stir in the cream. Season. Preheat grill to medium. Grate cheese. Remove pan from heat.

  7. Step 7

    Stir parsley, cauliflower and broccoli in the sauce. Scatter breadcrumbs, bacon and cheese over the top. Cook under the grill fro 10 minutes, or until golden and bubbling.

Tips & Warnings
  • You can add other favorite vegetables to make the medley your own.
