How to create a simple southern coconut pie

Things You'll Need
- Sauce pan
- Whisk
- 2 ready-made, 8-inch unbaked frozen pie shells
- 1 cup sugar
- 1/4 cup butter or margarine
- 1 cup milk
- 1 tsp. flour, or 1/4 cup corn starch
- 4 eggs, beaten
- 1 tsp. pure vanilla extract
- 3 1/2 cup finely-shaved coconut
- 2 tsp. rum (optional)
- 1 cup whipped cream

Thaw pie shells slightly by placing in the oven at 350 degrees Fahrenheit for a few minutes while you prepare the recipe.

Combine sugar, corn starch or flour, milk and butter in a saucepan.

Bring to a gentle boil over medium heat, stirring constantly with a whisk.

Remove from heat and slowly add in the beaten eggs.

Add vanilla extract, rum (optional) and coconut.

Remove pie shells from the oven and pour the filling evenly between the two pie shells.

Place the pies in the oven at 350 degrees Fahrenheit for 35 to 40 minutes.

Remove the pies from the oven and let cool thoroughly.

Spread whipped cream over the tops of both pies to finish; place in the refrigerator.
