I find myself disappointed with the usual Pineapple Upside Down cake when I sample one at parties or restaurants. My Mother, Nancy Ray of Tampa has passed on her Blue Ribbon, award winning recipe which has placed first at the Florida State Fair several years running. The absolute key to this recipe is the use of an IRON SKILLET. It makes or breaks this simple recipe. This is a wonderful cake for Thanksgiving or Christmas gatherings.

Instructions

Things You'll Need:

  • large iron skillet
  • yellow cake mix
  • jar cherries
  • can pineapple slices
  • package almonds
  • beautiful cake plate
  1. Step 1

    Heat your skillet on medium heat and add these ingredients: 1-1/2 cup brown sugar. 1/2 cup butter. Use butter, not magerine and you may add a bit more if the texture is too thick. Do not add too much butter or there will be a slightly greasy affect to the topping. Remove from heat and let cool.

    In the meantime begin preparing your yellow cake recipe according to directions. In place of using water where called for, use the combined juices from your jar of cherries and your pineapple. This will give your cake a pink color and it makes it taste so good!

    Going back to your skillet. Take the pineapple slices and position them on top of the brown sugar topping. You should be able to use the whole can. Place cherries in the middle of each slice and around the edges. Repeat the same pattern with the pecans. Use your imigination; there is no wrong or right way to do it. My motto is the more the better! It allgets baked into a yummy, gooey taste of heaven anyway! Put your skillet into oven and bake acccording to cake mix directions.

    After the cake has finished baking carefully remove from oven. Remember, this skillet will be heavy and hot! Immediately put your serving platece on top of the skillet and then gently turn it upside down. Remove and repositionanything that mighthave fallen out of place. Let it cool and the topping will harden. You are ready to serve this amazingly good cake!

Tips & Warnings
  • Play around with the topping style. There is no set pattern to placing your pineapples, cherries and nuts.
  • The skillet is a very heavy pan and gets extremely hot.
