This makes a great diabetic snack or sandwich.

Instructions

Things You'll Need:

  • Low Fat Cottage Cheese (80 calories or less per 1/2 cup)
  • No Fat Shredded Cheddar Cheese (45 calories 1/3 cup) or other no fat shredded Cheese
  • 4 ounces (1/4 cup 11 calories) Diced Canned Pimentos - drained (44 calories in one cup of pimentos)
  1. Step 1

    Drain the jar of diced pimentos.

  2. Step 2
     

    In a bowl, mix drained pimentos, cottage cheese, and shredded cheese.

  3. Step 3
     

    Add a little salt to your taste (optional).

  4. Step 4
     

    Serve on raw celery, diet bread, or cheese rice cracker snacks!

Tips & Warnings
  • For a little more flavor KICK, add another 4 ounce jar of drained diced pimento!
