How to Make A Quick And Easy Loaf Of Pumpkin Bread.

This is a healthy loaf of nicely spiced bread.

Instructions

Things You'll Need:

  • 3/4 cup whole-wheat flour
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup brown sugar
  • 1 teaspoon baking soda
  • 1 cup pumpkin puree
  • 1/2 cup olive oil
  • 2 large eggs beaten
  • 1/4 cup water
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 3/4 cup chopped walnuts
  1. Step 1

    Heat the oven to 350 degrees.

    Butter a 9 inch loaf pan.

  2. Step 2

    Blend together the flour salt sugar and baking soda.

    In a smaller bowl, blend together the pumpkin, olive oil, eggs, water, nutmeg, cinnamon, and allspice.

  3. Step 3

    Blend the oil mix gently into the flour mixture, adding the nuts just before ingredients are blended.

    DO NOT OVERMIX OR YOU LOAF WILL BE HEAVY.

  4. Step 4

    Pour batter into prepared pan.

    Bake for approximately 50 minutes or until tester comes out clean.

    Turn out and cool on rack.

    Enjoy!
