Things You'll Need:
- 3/4 cup whole-wheat flour
- 3/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1 cup brown sugar
- 1 teaspoon baking soda
- 1 cup pumpkin puree
- 1/2 cup olive oil
- 2 large eggs beaten
- 1/4 cup water
- 1/4 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1/4 teaspoon allspice
- 3/4 cup chopped walnuts

Step 1
Heat the oven to 350 degrees.
Butter a 9 inch loaf pan. -
Step 2
Blend together the flour salt sugar and baking soda.
In a smaller bowl, blend together the pumpkin, olive oil, eggs, water, nutmeg, cinnamon, and allspice. -
Step 3
Blend the oil mix gently into the flour mixture, adding the nuts just before ingredients are blended.
DO NOT OVERMIX OR YOU LOAF WILL BE HEAVY. -
Step 4
Pour batter into prepared pan.
Bake for approximately 50 minutes or until tester comes out clean.
Turn out and cool on rack.
