How to Make Easy Pickled Onions.

Pickled onions are a wonderful staple to have on hand. They are a great addition to any party.

Instructions

Things You'll Need:

  • 8 sterilized one pint jars and lids
  • 16 cups small white pickling onions, peeled
  • 1 cup of salt
  • cold water
  • 8 cups white vinegr
  • 2 cups granulated sugar
  • 1/4 cup mustard seed
  • 2 tablespoons horseradish
  • 2 tablespoons peppercorns
  • 8 bay leaves
  • 1/2 cup pimiento sliced
  1. Step 1

    Place the onions in a bowl.

    Sprinkle them with the salt.

    Cover them with cold water. Cover bowl and let onions sit overnight.

  2. Step 2

    Sterilize 8 one pint jars and lids. Keep hot.

    Rinse onions with cold water. Drain.

    In a heavy saucepan, mix together the vinegar, sugar, mustard seed and horseradish.

    Bring mixture to a boil and simmer for 15 minutes.

  3. Step 3

    Divide the onions among the jars.

    Divide the peppercorns and pimiento slices among the jars.

    Into each jar place a bay leaf.

  4. Step 4

    Pour the hot vinegar mixture over the onions to within 1/4 inch of the top of the jars.

    Close the jars, Process jars in a boiling-water bath for 10 minutes.

    Remove from bath. Cool on racks. Enjoy!
