Things You'll Need:
- 8 sterilized one pint jars and lids
- 16 cups small white pickling onions, peeled
- 1 cup of salt
- cold water
- 8 cups white vinegr
- 2 cups granulated sugar
- 1/4 cup mustard seed
- 2 tablespoons horseradish
- 2 tablespoons peppercorns
- 8 bay leaves
- 1/2 cup pimiento sliced

Step 1
Place the onions in a bowl.
Sprinkle them with the salt.
Cover them with cold water. Cover bowl and let onions sit overnight. -
Step 2
Sterilize 8 one pint jars and lids. Keep hot.
Rinse onions with cold water. Drain.
In a heavy saucepan, mix together the vinegar, sugar, mustard seed and horseradish.
Bring mixture to a boil and simmer for 15 minutes. -
Step 3
Divide the onions among the jars.
Divide the peppercorns and pimiento slices among the jars.
Into each jar place a bay leaf. -
Step 4
Pour the hot vinegar mixture over the onions to within 1/4 inch of the top of the jars.
Close the jars, Process jars in a boiling-water bath for 10 minutes.
Remove from bath. Cool on racks. Enjoy!
