Make a Perfect Loaf of Whole Wheat Bread

Does your Whole Wheat bread always come out like a brick? Follow my simple tips and it will rise high and be oh so soft.

Instructions

Things You'll Need:

  • 3 1/2 cups Whole Wheat flour.
  • 1/4 Cup Sugar
  • 1/4 Cup Vital Wheat Gluten
  • 1 Tsp Salt
  • 1 1/2 Cups warm water
  • 1 tsp Yeast
  • A Kitchen aid Stand mixer or Bosch
  1. Step 1

    First you need to start your yeast. Add all your water, sugar and yeast in a bowl. Water should be the temperature of a comfortable bath. Mix with a whisk and let stand for 10-15 minutes. Water will form a head on it like beer.

  2. Step 2

    Add your flour, gluten, and salt and turn your mixer on low-medium speed. Let mix for at least 10 minutes! If you don't properly mix your dough it will make a lousy loaf of bread.

  3. Step 3

    The more times you let your dough rise the finer a texture your bread will have. For a dinner where you will just be eating bread as a side one rise is sufficient, but if you want a nice loaf to use for sandwiches you will need to let it rise 2 times: Twice in the mixing bowl and once in the bread pan.

  4. Step 4

    For fine textured bread, cover mixing bowl with a kitchen towel and let rise till doubled in size. Then punch down,till back to starting size and let rise to double again. After second rise, knead dough on floured surface and form your loaf. Place in loaf pan and let rise till bread is 3/4 the desired size of your finished loaf, covered lightly with plastic wrap. When risen to desired size place in a 350 F oven for 25 minutes. After baking, let rest in pan for 5 minutes, then bread should easily come out of pan. Let rest for 30 more minutes to allow center to finish cooking. Then enjoy!

Tips & Warnings
  • Use a high quality non stick pan.
  • Cut slices the first day, or else bread may be crumbly to cut the following day.
  • Add 1-2 Table spoons oil when you add the flour and salt if you find the bread drys out to quickly.
  • Use a high Quality, long, serrated knife for the best slices.
  • Bread will be hot when it comes out of the oven.... Duh.
  • You will be addicted to making fresh homemade bread if you try this recipe.
