How to Make An Easy Poppy Seed Cake With An Orange Glaze.

This is an old favourite which is becoming increasingly popular with family and friends.

Instructions

Things You'll Need:

  • 1 cup poppy seeds
  • 1 cup milk
  • 1 cup butter
  • 1 cup sugar
  • 3 large eggs
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 3 tablespoons lemon juice
  • 1 tablespoon grated lemon rind
  • 1/2 cup orange juice
  • 2 more tablespoons granulated sugar
  • 1 more tablespoon lemon juice
  1. Step 1

    Heat oven to 350 degrees.

    Butter a 10 inch tube pan.

  2. Step 2

    In a small saucepan, heat the poppy seeds and milk just to the boil.

    Remove from heat and cool.

    Blend together the flour, baking powder, baking soda, and salt. Set aside.

  3. Step 3

    Cream together the butter and sugar.

    Beat the eggs into the butter mixture.

    Stir into the butter mixture, alternately, the flour mixture and the milk and seed mixture. When blending, always end with some of the dry ingredients

  4. Step 4

    Quickly stir in the vanilla, lemon juice and lemon rind.

    Spoon batter into the buttered pan and bake for 35 to 45 minutes or until tester comes out clean.

    Cool briefly on rack then invert to cool completely.

  5. Step 5

    Combine the orange juice, sugar and lemon juice in a small saucepan.

    Bring to a low boil, and simmer for 5 minutes, stirring occasionally.

    Pour the glaze over the completely cool cake.

    Serve. Enjoy!
