I love finding new ways of combining ingredients. I also like things quick and easy. I came up with this tasty meal the other day and wanted to share it with all of you. I consider a meal quick when I spend a less time in the kitchen. When using the oven, it frees up my time to do other things.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 ea. med onion, diced
  • 2 ea. med carrots, diced
  • 1 ea. celery stalk, diced
  • 1 ea. large yellow squash, diced
  • 1 ea. Can of artichoke hearts (bottoms), chopped
  • 1 ea. Can cream of mushroom soup
  • Vegetable stock (optional) for rice
  • 1 cup rice, cooked
  • Grated Parmesan cheese
  • Butter or olive oil
  • Salt & pepper to taste
  • Skillet
  • Pot to cook rice in
  • 13 x 9 baking dish
  1. Step 1

    Have all ingredients prepared. Cook the rice per bags instructions with the stock. Preheat oven to 350 degrees. Preheat skillets.

  2. Step 2

    Add butter or oil to pan. Saute the onion, carrots, and celery, together over medium to medium high heat until the onions are soft and translucent. about 15 minutes.

  3. Step 3

    Meanwhile in separate skillet (preheated) med-medium high heat add butter or oil to the skillet and saute squash until it is cooked about half way through. More if you like a softer texture. Also about 15 minutes.

  4. Step 4

    Layer ingredients in 13x9 baking dish as you would a lasagna. Add onion mixture, then rice, then squash, and then the chopped artichoke bottoms.

  5. Step 5

    Mix together the cream of mushroom soup with a half can of milk(full can if too thick). Pour over the mixture evenly. Sprinkle with grated Parmesan and cover with foil.

  6. Step 6

    Cook for about one hour in the oven.
    About half way through, remove foil and allow the Parmesan to brown.
    Remove from oven, stir, and serve hot. Enjoy!

Tips & Warnings
  • Use medium heat for electric stoves and medium high heat for gas.
  • Can be used as a main course or a great side dish.
  • Dish will be hot. Use caution when removing from oven.

on 7/29/2009 Sounds like a good recipe, but I would use vegetable broth rather than chicken broth, and maybe a little less rice. Nice idea for a new veggie casserole.
