How to Make a Moist Roast Pork with Apples

Here is a recipe for a moist and delicious roast pork loin with apples. Bon Appetit!

Difficulty: Moderate
Instructions

Things You'll Need:

  • 2 lb. pork loin
  • Butter
  • Dried Thyme
  • Penzey's 4S (or other seasoned salt)
  • Peach Jam (homemade preferred)
  • Balsamic Glaze
  • Apple Cider Vinegar
  • 2 Matsu Apples (or your favorite variety)
  1. Step 1

    Preheat the oven to 400 degrees. Place a roasting pan over medium heat and melt about 1-2 T. butter in the pan. Rub 1 T. of 4S and 2 t. dried thyme into the pork loin. Once it is bubbling, place the pork loin in the pan and brown all sides.

    Once the pork is nicely browned, place the pan in the oven for 15 minutes.

    Meanwhile, peel and slice the apples into thin, bite-size pieces.

  3. Step 3

    Turn the oven down to 350 degrees and remove the pork from the oven. Drizzle balsamic glaze over the top of the roast. Then spread some about 2 T. peach jam over the top of the roast. Drizzle about 1 T. olive oil over the roast. Return to oven and cook for another 30-35 minutes depending on the thickness of the pork.

    At this time, remove pork from the oven and sprinkle apple slices around the sides of the pan where it will be able to cook in the pork's juices. Add about 1/4 c. of apple cider vinegar over the apples and the pork. Return the roast to the oven for another 10-15 minutes or until the internal temperature reaches 150-155 degrees (the pork will continue to cook for a few minutes after you remove it from the oven).
