Ever seem to cook chicken on the grill and it is still red inside? What's the key to fully cooked chicken? Burn it to a crisp? -NO! The technique is called "par cooking".

Difficulty: Easy
Instructions

Things You'll Need:

  • Servings: 4
  • Cook: 20 minutes
  • Prep Time: 40 minutes
  • Ingredients: Water 4 Whole Chicken Legs
  • Supplies: Stove Large Pot with lid Cutting Board Sharp knife
  1. Step 1
     

    Using a sharp knife and cutting board remove all visible fat from the whole chicken legs. Starting at the joint of the whole chicken leg cut through the leg to separate the leg and thigh portions.

  2. Step 2
     

    Place large pot on stove. Put thighs and legs in a large pot. Add enough water to cover chicken pieces, put on pot lid, turn stove on to medium-high and bring to a boil.

  3. Step 3
     

    Turn stove on to medium-high and bring to a boil. Remove lid, reduce heat to medium and cook for 10-12 minutes stirring occasionally.

  4. Step 4

    Shut off stove, remove chicken pieces and they are ready for the grill.

Tips & Warnings
  • Buy in bulk, par- cook it all at once and then freeze the extra for another Bar-B-Q. This saves time and money.
  • You can freeze par cooked chicken for up to 3 months.
  • Save the chicken broth for soups or gravies. It also freezes well for up to 3 months.
  • For single servings of the chicken broth pour in muffin tins and freeze. When frozen remove from tins, place in freezer bag, and later you can pull out as many servings as you need.
