How to Fake Classic 7 Minute Icing

Yummy 7 minute icing is a cake frosting beloved by Southern cooks. You literally stir it for 7 minutes while it cooks over low heat. Here's a version that will let you fake classic 7 minute icing and impress your mother-in-law at the same time.

Instructions

Things You'll Need:

  • 1/2 cup sugar
  • 2 tbsp. water
  • 2 egg white
  • 1 jar marshmallow cream
  1. Step 1

    Start your 7 minute icing by combining the sugar, water and egg white in a saucepan. Cook over low heat for about 2 to 3 minutes, beating continuously with an electric mixer.

  2. Step 2

    Watch for soft peaks to form in the mixture. When you see them, remove the pan from the heat. Work quickly to get the best 7 minute icing.

  3. Step 3

    Add the marshmallow cream. Continue beating the mixture for about 2 more minutes. Your 7 minute icing is ready when stiff peaks form.

  4. Step 4

    Frost your cake with your delicious 7 minute icing. You will have to frost the cake immediately after making the icing or it will start to set up.

Tips & Warnings
  • This 7 minute icing is fantastic on coconut cake. After you're through frosting the cake, sprinkle coconut on top and press more coconut into the sides of the cake.
  • It's also good on lemon curd cake, often called lemon cheesecake in the South.
