Things You'll Need:
- Sharp knife
- Paper towels
- Small, zip-top plastic bags
- Plastic container with lid
- Masking tape
- Marker

Step 1
Slice the fish into single-serving chunks, keeping an eye out for any small bones, dark patches or pieces of skin left on the fillets. Remove and dispose of these items.

Rinse the fish pieces in cold water and pat them dry with paper towels. This step removes any debris or liquid that could break down the meat of the fillet.

Fill a zip-top plastic bag three-fourths of the way with cool water and slide a serving of fish into the bag. Seal the bag, getting as much air out as possible. Put the fish in the freezer for two to three hours, until the ice begins to form around the fillet.

Remove the bag from the freezer and place it in a plastic container. Fill the container about three-fourths of the way with water and put the lid on the container.

Write the date and the type of fish on a piece of masking tape and stick the tape to the lid. Put the container in the freezer and freeze until it's time to eat the fish.
