I remember my grandmother making this salad, but she usually used lettuce instead of spinach. It's good either way.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • One bunch of baby spinach, or a small head of lettuce, shredded
  • 4 or 5 strips of bacon
  • 1 small onion
  • apple cider vinigar
  • sugar
  • salt & pepper
  1. Step 1

Fry bacon until crisp, remove from skillet & let cool.

  2. Step 2

Add chopped onion to bacon grease skillet. Sauté until transparent.

  3. Step 3

Add about 1/4 cup of vinegar, 1 Tbs. sugar, salt & pepper to taste to the onions in skillet. Cook & stir until bubbly.

  4. Step 4

Pour over spinach or lettuce in a large bowl & toss well. Serve immediately.
