Things You'll Need:
- 2 cups of dry black beans
- 1 tablespoon butter
- 1 large onion chopped
- 6 cloves of garlic, chopped
- 2 stalks of celery, chopped
- 10 cups of vegetable both, home-made is best
- 1 small can tomatoes, chopped
- 2 bay leaves
- 1/4 teaspoon oregano
- 1/4 teaspoon basil
- salt and pepper to tast
- 1 tablespoon lemon juice
- sour cream for garnish, optional

Step 1
Rinse the beans in cold water.
In a heavy saucepan, place the beans. Cover with water.
Bring water to boil. Cover. Remove from heat. Leave overnight.
Drain. -
Step 2
In a heavy saucepan, melt the butter.
Sauté the onion, garlic, and celery, until the onions are soft. -
Step 3
Add the beans, vegetable broth, bay leaves, oregano and basil.
Bring mixture to a boil.
Cover and simmer over medium heat for about 2 hours or until beans are soft.
If soup seems too thick during cooking, add small amounts of BOILING water. -
Step 4
Remove bay leaves.
Salt and pepper to taste.
Stir in lemon juice.
Blend about 1/2 the soup to make a thick mix. Return to pot and mix.
Adjust seasonings.
Serve with sour cream, if desired. Enjoy!
