How to Very Easy black Bean Soup.

This is a simple, healthy, black bean soup that is made from scratch.

Instructions

Things You'll Need:

  • 2 cups of dry black beans
  • 1 tablespoon butter
  • 1 large onion chopped
  • 6 cloves of garlic, chopped
  • 2 stalks of celery, chopped
  • 10 cups of vegetable both, home-made is best
  • 1 small can tomatoes, chopped
  • 2 bay leaves
  • 1/4 teaspoon oregano
  • 1/4 teaspoon basil
  • salt and pepper to tast
  • 1 tablespoon lemon juice
  • sour cream for garnish, optional
  1. Step 1

    Rinse the beans in cold water.

    In a heavy saucepan, place the beans. Cover with water.

    Bring water to boil. Cover. Remove from heat. Leave overnight.

    Drain.

  2. Step 2

    In a heavy saucepan, melt the butter.

    Sauté the onion, garlic, and celery, until the onions are soft.

  3. Step 3

    Add the beans, vegetable broth, bay leaves, oregano and basil.

    Bring mixture to a boil.

    Cover and simmer over medium heat for about 2 hours or until beans are soft.

    If soup seems too thick during cooking, add small amounts of BOILING water.

  4. Step 4

    Remove bay leaves.

    Salt and pepper to taste.

    Stir in lemon juice.

    Blend about 1/2 the soup to make a thick mix. Return to pot and mix.

    Adjust seasonings.

    Serve with sour cream, if desired. Enjoy!
