How to make Cheese & Raisin Bruschetta

These sweet and savory bites are perfect as hors d' oeuvres, appetizers or just a tasty snack.

Makes 12 servings.

Instructions

Things You'll Need:

  • 1 baguette (about 10 oz.)
  • 1 onion, peeled and chopped
  • 3/4 cup dark and/or golden raisins
  • 2 tablespoons olive oil
  • 1 log goat cheese (5 oz.)
  • chives (optional)
  1. Step 1

    Heat oven to 400 degrees.

  2. Step 2

    Diagonally slice the baguette into 20 pieces. Place bread slices directly on oven rack. Bake for 8 minutes or until golden. Set aside.

  3. Step 3

    In a skillet, over medium heat, cook the onion and raisins in the olive oil for about 8 minutes or until softened.

  4. Step 4

    Top each bread slice with a dollop of goat cheese. On top of the cheese, add a dollop of the onion and raisin mixture.

  5. Step 5

    Garnish with chives, if desired.
