How to Make Persimmon Bread- Wild Persimmons

It'll soon be time for picking Persimmons.
After the first frost is a good time.
I don't know about you but the trees were loaded around here. And do I love persimmons. I love fruit breads, too.

Difficulty: Moderate
Instructions

Things You'll Need:

  • 2 eggs
  • 1 tsp. ground cinnamon
  • 1 1/2 cups flour (all-purpose)
  • 1 cup skinned persimmon pulp
  • 3/4 cups sugar
  • 1/2 cup chopped walnuts
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1/2 cup vegetable oil
  • 1/2 cup raisins
  1. Step 1

    Preheat oven 325 degrees.
    Grease baking or loaf pan.

  2. Step 2

    In small bowl combine flour, salt, cinnamon, nuts and raisins.
    In large bowl mix baking soda into persimmon pulp.
    In bowl blend eggs, sugar and oil.

  3. Step 3

    Add sugar mixture into pulp.
    Fold in the flour mixture.
    Pour into greased pan.
    Bake 75min. or til center is done.

Tips & Warnings
  • Make sure the persimmons are skinned. The skin can make your lips pucker for a week!
  • Be sure to gather persimmons after the first frost, because they're good and ripe then. And the pulp won't make you pucker for another week!
  • Spread lots of butter on and enjoy!!
  • Careful the bread is hot. I know you want a piece of that nice, fresh, hot bread. But you'll have to give it a chance to rest a little.
