How to Make Easy 'Coconut Surprise' Dessert

This sugar-free, flour-free dessert is a favorite at our house. We've adapted it and always add something a little different each time, hence the name 'Coconut Surprise.' It's very easy to make, and doesn't take long, either.

Instructions

Things You'll Need:

  • 2 eggs
  • 1 1/2 - 2 cups unsweetened shredded coconut
  • 1/2 cup honey
  • 1/2 cup almond flour
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins or other fruit (optional)
  • Shallow pan
  • Oil for pan
  1. Step 1

    In a medium-sized bowl mix eggs with a whisk or fork. Preheat oven to 350 degrees F.

  2. Step 2

    Add remaining ingredients (coconut, almond flour, nuts, honey, fruit) to eggs, and mix with a spoon.

  3. Step 3

    Oil a 9x13 or smaller shallow glass (or use your preference) pan, spread coconut mixture evenly in pan. It's okay if it doesn't reach the sides of the pan.

  4. Step 4

    Bake for approximately 20 minutes.

Tips & Warnings
  • Fruit that works really well: raisins, blueberries or strawberries.
  • This is a fun and easy recipe to make with children.
  • Alternative: Try putting balls of coconut mixture on a greased cookie sheet for macaroons. Cooking time may be reduced, watch closely.
  • Fruit is hot!
  • Once tasted, it goes fast!
