Most people think of eating waffles with syrup for breakfast or with ice cream for dessert; but the waffle was originally created by the Greeks to be eaten with cheese and herbs as a main meal. Chili topped cornmeal waffles can be enjoyed as snacks or for dinner and are easy to prepare. This waffle recipe will delight your family and dinner guests with a creative way to serve traditional chili and cornbread.

Instructions

Things You'll Need:

  • 1 ½ cups self-rising cornmeal
  • 1 ½ cups self-rising flour
  • ¼ cup sugar
  • 3 eggs, slightly beaten
  • 1 ½ cups milk
  • ¼ cup melted butter
  • Chili topping
  • Shredded cheddar cheese
  1. Step 1

    With a wire whisk, combine cornmeal, flour and sugar in a large bowl. Make a well in the center of the dry mixture.

  2. Step 2

    Mix eggs, milk, and butter together until well blended. Add to dry ingredients and stir until moistened.

  3. Step 3

    Spoon one-third of the mixture into a preheated, oiled waffle iron and bake. Remove the cooked cornmeal waffle from the iron and place on a serving plate. Repeat with the remaining two-thirds of the mixture until all the cornmeal waffles have been made.

  4. Step 4

    Spoon fresh hot chili over the each cornmeal waffle and top with the shredded cheddar cheese. Serve immediately. Makes 3 eight-inch waffles.

Tips & Warnings
  • Double the recipe to make additional waffles.
  • Serve a fresh green salad as a side dish to compliment the cornmeal waffles.
