How to Make Easy And Delicious Apricot Bavarian Cream.

This recipe needs apricot puree which you can easily make yourself from fresh, canned or dried apricots. In a pinch, you can even use apricot baby food.

Instructions

Things You'll Need:

  • 1 cup apricot puree
  • 1 envelope gelatin, unflavored
  • 1/4 cup cold water
  • 4 egg yolks
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla
  • 1 cup milk
  • 1 cup whipping cream, whipped
  1. Step 1

    Make puree.

    Dried apricots - cook, barely covered with water, until tender. Drain and puree in blender.

    Fresh apricots - blend in blender.

    Canned - drain and blend in blender.

  2. Step 2

    Dissolve gelatin in cold water.

    Beat the egg yolks until thick and foamy.

    Continuing to beat, add sugar gradually. Mixture should be smooth and thickening.

    Stir in vanilla.

  3. Step 3

    In a heavy saucepan, heat the milk to the point of boiling.

    Very slowly, pour the hot milk over the egg mixture, beating constantly.

    Return mixture to the saucepan and cook over medium heat until the mixture is thick. Stir mixture as it cooks.

  4. Step 4

    Remove mixture from heat and quickly stir in the gelatin until it is completely incorporated.

    Cool mixture.

    Add apricot puree.

  5. Step 5

    FOLD in the whipped cream.

    Spoon mixture into mold or serving dishes.

    Chill until firm, about 4 to 5 hours.

    Serve. Enjoy!
