How to make honey butter bacon brine injection.

Here is our famous honey butter bacon brine solution for injecting turkeys and poultry. This delicious injection works great on smoked turkeys and fried turkeys. This also works great on baked turkeys too. No more dry flavorless birds. Now you can smoke, bake, or fry turkeys like the pros.

Instructions

Things You'll Need:

  • 2 sticks butter
  • 1/2 gallon water
  • 1/2 cup pickling salt
  • 1 tbsp of tenderquick
  • 1/2 cup honey(tupelo or sourwood is best)
  • 1/2 lb hickory smoked bacon
  1. Step 1

    fry 1/2 lb of bacon reserving the drippings. microwave works great. If using stove be careful not to burn bacon.

  2. Step 2

    add bacon grease, butter, water, pickling spice, tenderquick to pot on stove and bring to boil stirring continuously.

  3. Step 3

    let mixture cool to 160 degrees and add honey.

Tips & Warnings
  • do not add honey till mixture cools to 150 degrees.
  • Let mixture cool before injecting but not so cool that it clogs injector. Can always be warmed in microwave or stove.
  • If using for fried turkey omit the honey as it will turn the turkey black.(doesnt hurt flavor but is not as pretty)
  • When cooking poultry make sure meat temperature reaches 165 degrees in the thigh to insure food safety.
