There's a recipe for everyone. It has some zip to it, but is not overly spicy. I use no chili seasoning, all the flavor comes from the ingredients. And if your batch does come out a little to spicy, tone it down with some sour cream and shredded cheese. Don't forget the bread & butter, and your glass of milk!! Enjoy.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 lb ground Beef
  • 1 lb tube Sausage (spicey or regular)
  • 2 cans Chili Beans
  • 2 cans Kidney Beans
  • 1 can Tomato Paste
  • 4 small cans Tomoto Sauce (or 2 regular size)
  • 2 small cans Mushrooms (sliced)
  • 1 onion
  • 1 sweet Red Pepper
  • 1/2 cup Jalopeno slices
  • dash of Pepper
  1. Step 1

Start by browning the ground beef. When done, drain grease and place on a plate. (Cover the plate with a paper towel before putting meat on, it will absorb some of the grease.) Next brown the sausage, and drain like above.

  2. Step 2

While the meats are cooking begin prepping the veggies. Open cans of mushrooms and drain. Dice up the mushrooms, green peppers, onion and jalapeno slices. Set all the chopped ingredients off to the side.

  3. Step 3

Drain the liquid out of the kidney beans.

  4. Step 4

You should already have your crock pot out, if not get it out. Now you will want to begin filling the pot. The amount of ingredients you can put in your crock will depend on its size. (Mine is a regular sized, drop in crock and this entire recipe will fix in it.) But start with the important items first.

  5. Step 5

Now begin filling up the crock with the ingredients. I start as follows: add 1 can chili beans (undrained), 2 cans tomato sauce, and the can of tomato paste.

  6. Step 6

Next you will want to add half the plate of hamburger, half the sausage, half the drained kidney beans and half the mushrooms. Then sprinkle in some of the onions, peppers and jalapeno. Stir everything up thoroughly.

  7. Step 7

Hopefully there is still plenty of room for more ingredients. If not finish filling the pot with a little bit more of all the ingredients. The extras came be saved or discarded. Sprinkle some ground pepper in, and stir one more time.

  8. Step 8

Turn the crock pot to the low setting and cover. Let the chili cook all day. This meal is ready within a couple hours, but the longer it cooks the tastier it gets. Enjoy.

Tips & Warnings
  • There are two types of crock pots. One type has a pot that drops into the heating base and the other type just sits on base. The drop-in styles dont have to be stirred as much. But with the heated bottom crocks need stirred quite often to keep from burning.
  • If the sausage and ground beef are cooked together, the ground beef will absorb the sausage flavor and will taste like it.
  • Don't forget the sour cream, shredded cheese, and cracker toppings.
  • Bread & butter and a glass of milk also go great with this meal.
