Things You'll Need:
- 1-- 2lb. pie pumpkin
- 1--Tbsp.butter
- 1/4 cup fine chopped onion
- 1/3 cup minced chipotle peppers in adobo sauce
- 3--Tbsp. maple syrup
- 1/4 tsp. salt
- 1/8 tsp. curry powder

Step 1
stock potsPreheat oven 400 degrees.
Bring a large pot full of water to a boil.
Slice the pumpkin into 4 length-wise pieces; Scrap out the seeds and membrane.
Wash and dry the pieces.
Put the slices into the boiling water for 8 to 10 min; til tender.
Drain well. -
Step 2
syrupMake a glaze.
Melt butter.
Add onion; saute 2 min.; til tender.
Add chipolte sauce, maple syrup, salt and curry powder.
Heat 1 min.; til blended -
Step 3
basterArrange pumpkin slices, cut side up in a shallow pan.
Put maple-pepper sauce in the center of the slices.
Bake 15 min.; basting with the sauce.
