How to Make Baked Maple-pumpkin Slices

This is similar to Baked Acorn Squash. But it has it's own unique taste.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1-- 2lb. pie pumpkin
  • 1--Tbsp.butter
  • 1/4 cup fine chopped onion
  • 1/3 cup minced chipotle peppers in adobo sauce
  • 3--Tbsp. maple syrup
  • 1/4 tsp. salt
  • 1/8 tsp. curry powder
  1. Step 1

    Preheat oven 400 degrees.
    Bring a large pot full of water to a boil.
    Slice the pumpkin into 4 length-wise pieces; Scrap out the seeds and membrane.
    Wash and dry the pieces.
    Put the slices into the boiling water for 8 to 10 min; til tender.
    Drain well.

  2. Step 2

    Make a glaze.
    Melt butter.
    Add onion; saute 2 min.; til tender.
    Add chipolte sauce, maple syrup, salt and curry powder.
    Heat 1 min.; til blended

  3. Step 3

    Arrange pumpkin slices, cut side up in a shallow pan.
    Put maple-pepper sauce in the center of the slices.
    Bake 15 min.; basting with the sauce.

Tips & Warnings
  • Takes 50 min. to make.
  • Serves 4
  • These will be extremely hot.
