Vegetarian fritters with spaghetti squash as the base. I was amazed at how tasty these turned out to be.

Instructions

Things You'll Need:

  • 1 medium-sized spaghetti squash
  • 1/2 of an onion, finely chopped
  • 1 zucchini, finely chopped
  • 1 clove of garlic, minced
  • 2 T ricotta cheese
  • 1 egg
  • olive oil
  • salt
  • pepper
  • panko bread crumbs (or any kind of bread crumbs, really)
  1. Step 1

    Preheat the oven to 375 degrees and cut the spaghetti squash in half and remove all the seeds. Lay each half, cut side up on a baking sheet and bake for 1 hour.

  2. Step 2

    Let the spaghetti squash cool completely. In the meantime, sautee the zucchini, onion and garlic with the olive oil in a frying pan for 6-8 minutes.

  3. Step 3

    Preheat the oven for 350 degrees

  4. Step 4

    Use forks to dig out the "spaghetti strands" of squash and mix in a bowl with the contents of the frying pan.

  5. Step 5

    Add the ricotta cheese, salt and pepper and finally, the egg. Mix well and let sit for a few minutes.

  6. Step 6

    Fill a bowl halfway up with bread crumbs.

  7. Step 7

    Shape the mix into ping pong ball-sized portions and flatten in your hand before coating them well with the bread crumbs. Your mixture may be very soupy, if this is the case, just work with what you have and be gentle, don't go over flattening or they will fall apart completely.

  8. Step 8

    Lightly grease a baking sheet and pop the fritters in for 20 minutes, turning once.

  9. Step 9

    While they're baking, fill a skillet 1/4 of an inch full of veg./canola/olive oil set to medium heat.

  10. Step 10

    Once hot enough transfer a few fritters at a time to the hot oil and fry until golden brown, flipping over as needed.

Tips & Warnings
  • Would be good served with various sauces and salsas, but I love them plain.
  • To be more healthy, don't fry them, just eat them after they have baked, although the frying adds something to them that baking just can't provide
  • watch out for hot oil!
  • be careful when cutting the squash in half, i almost stabbed myself in the stomach doing so

on 10/11/2008 Perhaps if you just greased the baking sheet with a thin coat of oil (olive oil would be good), it would add a bit more crispiness to the fritters and thus eliminate the need for the pan fry? Regardless, I'm off to pick up some squash!! Cause this one sounds ROCKIN!!! Thank you!! :)
