Things You'll Need:
- 1 1/2 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 1/2 teaspoons vanilla
- 3/4 cup milk
- 1 1/4 cups sweet coconut
- 6 more tablespoons butter, softened
- 1 cup icing sugar
- 1/4 cup milk
- 3/4 cups more sweet coconut

Step 1
Heat oven to 350 degrees.
Butter an 8 inch square pan. -
Step 2
Mix together the flour, baking powder and salt.
blend together the softened butter and 1 cup sugar.
Beat in eggs and vanilla. Beat until the mixture is very light and fluffy. -
Step 3
To the butter mixture, add half the flour mixture and half the milk.
Beat well.
Add the rest of the flour mixture and the milk.
Beat well.
Fold in the coconut. -
Step 4
Pour the batter into the prepared pan.
Bake for approximately 40 minutes or until a cake tester comes out clean.
Cool completely on rack. -
Step 5
When cake is cool, make the frosting.
In a medium bowl, blend together the butter and icing sugar.
Beat in the milk. Beat mixture well.
Mix in one half cup of the coconut. -
Step 6
Spread the cooled cake with the icing. Sprinkle with the other 1/4 cup coconut.
