Things You'll Need:
- 2 large eggs
- 1/2 cup of pumpkin, canned or home cooked
- 1/4 cup butter, melted
- 2 1/4 cups milk
- 1 cup whole-wheat flour
- 1 1/4 cup all-purpose flour
- 1/4 cup brown sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/4 teaspoon nutmeg

Step 1
Mix together the flours, sugar, baking powder, salt, cinnamon, allspice and nutmeg.
In a small bowl, beat the eggs well. -
Step 2
Beat into the eggs, the pumpkin, melted butter, and milk.
Stir the egg mixture into the flour mixture and mix until blended. -
Step 3
Cook as you regularly cook pancakes.
If the batter is too thick, add a bit more milk.
Serve with syrup, preferably maple. Enjoy!

on 10/12/2009 My daughter's not crazy about whole wheat flour so I only used 1/2 cup and added another 1/2 cup of pumpkin and 1/4 cup brown sugar. A little extra baking powder made them real fluffy. I also used shortening and set my burner on medium heat to keep them from getting too dark. Delicious!
