How to Make Easy Pumpkin Pancakes.

These pancakes are good for you, delicious, and a great way to use up any extra pumpkin.

Instructions

Things You'll Need:

  • 2 large eggs
  • 1/2 cup of pumpkin, canned or home cooked
  • 1/4 cup butter, melted
  • 2 1/4 cups milk
  • 1 cup whole-wheat flour
  • 1 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/4 teaspoon nutmeg
  1. Step 1

    Mix together the flours, sugar, baking powder, salt, cinnamon, allspice and nutmeg.

    In a small bowl, beat the eggs well.

  2. Step 2

    Beat into the eggs, the pumpkin, melted butter, and milk.

    Stir the egg mixture into the flour mixture and mix until blended.

  3. Step 3

    Cook as you regularly cook pancakes.

    If the batter is too thick, add a bit more milk.

    Serve with syrup, preferably maple. Enjoy!

on 10/12/2009 My daughter's not crazy about whole wheat flour so I only used 1/2 cup and added another 1/2 cup of pumpkin and 1/4 cup brown sugar. A little extra baking powder made them real fluffy. I also used shortening and set my burner on medium heat to keep them from getting too dark. Delicious!
