Things You'll Need:
- fresh whole mushrooms
- turkey bacon
- velveeta or other soft cheese
- red onion
- skillet
- baking sheet

Step 1
This recipe makes enough filling for about two dozen medium size mushrooms. Clean and remove stems from mushroom caps. Set aside.

Step 2
In skillet or microwave cook turkey bacon until crisp. Set aside. Peel and finely chop half of red onion and brown in skillet.

Step 3
Cut about half an 8oz block of Velveeta into 1-inch chunks. Add to red onion in skillet and cook on low heat until cheese is melted.

Step 4
Crumble bacon and combine with cheese and red onion in skillet.

Step 5
Stuff mushroom caps with filling. Arrange on baking sheet. Bake at 350 for about 20 minutes, or until heated through. Allow to cool for a few minutes before serving.
