Red Lentil Soup is a delicious, comforting soup that both adults and kids love. Not only is it quick and easy to prepare, but this recipe with red bell pepper adds a mild sweetness you are sure to enjoy. Makes a great Thanksgiving soup.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 cup of red lentils
  • 1/2 medium white onion
  • 1/6 red bell pepper
  • 2 Tablespoons olive oil
  • 1/2 chicken bouillion cube
  • salt to taste
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 4 cups of water
  • 1 lemon sliced
  • electric blender
  1. Step 1
     

    Wash the red lentils to remove any dirt and debris.

  2. Step 2
     

    In a medium pan saute the onion and red pepper in the olive oil until the onion is slighly wilted.

  3. Step 3
     

    Add the washed red lentils and other ingredients to the pan. Bring to a boil. Simmer for 15 minutes or until lentils appear to be breaking up.

  4. Step 4
     

    Allow pan to cool. Pour into an electric blender and mix until red pepper and onion are chopped fine. Pour back into pan to reheat if needed.

  5. Step 5
     

    Serve warm with a slice of lemon.
    Children enjoy red lentil soup straight or mixed with rice or fine noodles such as crushed angle hair pasta.

Tips & Warnings
  • Look for red lentils in the international or middle eastern section of the grocery store.
  • To prevent accidental scalding allow the soup to cool before transferring it to the blender. Be sure to put the lid on the blender before mixing any hot liquids.
