Things You'll Need:
- 1 box of Betty Crocker Banana Bread Mix
- 1 Can of Cream of Coconut
- 1 Can of Coconut Milk
- 1 Box of Jello Vanilla Instant Pudding
- 1 cup Milk
- 1 Mixing Bowl
- 1 Whisk
- 1 Bread Loaf Pan

Step 1
First you will prepare the banana bread as directed on the box, place in oven and bake.

While your banana bread is baking you will place Vanilla pudding mix in a mixing bowl.

You will then add a 1 cup of Milk, 1 part (1/2cup) of Cream of Coconut, and 1 part (1/2cup) of Coconut Milk, to the Vanilla pudding mix. You will Mix thoroughly until all or most of the bumps are gone.

Step 4
You will then place the pudding to the side in your refrigerator to set.

Step 5
Once your banana bread is finished baking and has cooled, you will then get your pudding out of the refrigerator.

Step 6
You will now cut your banana bread into two halves horizontally, the same as you would when layering a cake (see picture to the left).

Step 7
You will then spread about 1/2 inch of pudding across the bottom half of the banana bread.

Step 8
Place the top half back on top of the bread, and set aside until ready to eat.

Step 9
When ready to serve cut the coconut banana bread in slices the same you would with regular banana bread.

Step 10
Sit back and watch your family enjoy a delicious treat!

on 8/5/2009 i just wanted to share something lol I created this recipe about 2 years ago. The last time i made it was about the same time i put it up here on ehow (pics are of my bread and children). I made the bread last night and added coconut flakes and light chocolate frosting ontop. If you want a crazy delicious treat when making this you def. gotta try frosting with coco leaves. It was too good. fair warning if you giving this to kids give it to them early afternoon, they will get sugar rush 101!
