Lengua is often used in taco dishes.

Lengua -- beef tongue -- is the tongue of a cow and is seasoned with onion and other spices and then placed in a pot to boil. After it has cooked, the skin is often removed and the rest of the meat is served. Lengua is used often in Mexican, Filipino and Bulgarian cuisine. In America, the tongue is used to create sandwiches for breakfast, lunch or dinner. Cooking lengua is simple. Does this Spark an idea?

Things You'll Need

  • Large stock pot
  • 1lb. beef tongue
  • Large onion, peeled
  • 1 garlic head, peeled and crushed
  • 6 bay leaves
  • 1 tbsp. of peppercorns
  • 2 tbsp. salt

Instructions

    • 1

      Fill a large stock pot two-thirds full of water. Add onions, crushed garlic cloves, bay leaves, peppercorns and salt. Add the beef tongue. Bring water to a boil, then reduce heat to a simmer and cover the pot with lid. Cook until the tongue is tender.

      Remove tongue from water and let cool for two minutes. Use your fingers or a sharp small knife to remove the light colored covering over the tongue.

      Slice the tongue in 1/4-inch slices. Heat a little oil in a frying pan on medium high and sauté the slices on both sides until they are lightly browned.

      Store the lengua in a shallow airtight container with plastic wrap in the refrigerator or freeze lengua in freezer wrap.
