A Delicious Gluten Free Zucchini Applesauce Muffin

Looking for a moist, flavorful zucchini bread that is as good for you as it tastes? Look no further! This recipe can be altered to your own personal tastes or dietary needs. To make it gluten free simply replace the flour with an equal amount of your favorite gluten free flour mixture. I recommend baking the gluten free variation in muffin cups or mini loaf pans to prevent an underbaked center.

Instructions

Things You'll Need:

  • 1 Zucchini
  • 1 cup carrots
  • 3 cups of flour
  • 1 1/2 tsp baking soda
  • 1 tsp baking powder
  • 2 cups white sugar
  • 1 cup dark brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 4 eggs
  • 1 cup cinnamon applesauce
  • 3/4 cup canola oil
  • 1 tsp vanilla extract
  1. Step 1
    Pureed zucchini mixture

    Grate unpeeled zucchini and carrots as fine as you desire. My children are picky so I actually pureed mine in the vita-mix.

    All wet ingredients added into the mixture.

    Add eggs, sugar, vanilla, applesauce and oil to the zucchini carrot mixture. Mix well.

  3. Step 3

    Add salt, cinnamon, nutmeg, baking powder and baking soda to the zucchini mixture. Mix well.

    Mix after each cup of flour.

    Add flour one cup at a time. Mix in well between cups.

    Ready for the oven...topped with turbinado sugar for an extra crispy sweetness!

    Pour into greased pan or muffin cups. If desired sprinkle top with turbinado sugar. Bake at 375 until golden brown and set in the middle.

Tips & Warnings
  • Bake gluten free batter in smaller portions to ensure even baking.
  • Freeze if not eaten immediately in order to maintain freshness. Reheat for best tast if using gluten free mixture.
  • High altitude and gluten free flour affects the time it takes to bake. Check often and don't rush the finished product!
