Things You'll Need:
- 1 Zucchini
- 1 cup carrots
- 3 cups of flour
- 1 1/2 tsp baking soda
- 1 tsp baking powder
- 2 cups white sugar
- 1 cup dark brown sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 4 eggs
- 1 cup cinnamon applesauce
- 3/4 cup canola oil
- 1 tsp vanilla extract

Step 1
Pureed zucchini mixtureGrate unpeeled zucchini and carrots as fine as you desire. My children are picky so I actually pureed mine in the vita-mix.

All wet ingredients added into the mixture.Add eggs, sugar, vanilla, applesauce and oil to the zucchini carrot mixture. Mix well.

Add salt, cinnamon, nutmeg, baking powder and baking soda to the zucchini mixture. Mix well.

Step 4
Mix after each cup of flour.Add flour one cup at a time. Mix in well between cups.

Step 5
Ready for the oven...topped with turbinado sugar for an extra crispy sweetness!Pour into greased pan or muffin cups. If desired sprinkle top with turbinado sugar. Bake at 375 until golden brown and set in the middle.
