Everyone loves cheesecake, but sometimes we may not want a lot of it. Making Mini Cheesecakes is the perfect option. Satisfy your taste buds with this quick recipe. It's easy as one, two, three.

Instructions

Things You'll Need:

  • 2 (8 Ounce) packages of cream cheese.
  • 2 Eggs
  • 1 tsp. Vanilla Extract
  • 3/4 Cup Sugar
  • 1 Package of Graham Crackers
  • 1 (21 Ounce) Can cherry filing
  • Cupcake liners
  • Muffin pan
  1. Step 1

    Preheat your oven to 350 degrees F. Line muffin pan with cupcake liners.

  2. Step 2

    Crush graham crackers and place 1/2 tsp. graham cracker crust into each cupcake liner.

  3. Step 3

    In a mixing bowl beat cream cheese until smooth. Then add the sugar, vanilla, and eggs until blended well. Once blended, pour the cream cheese mixture into the cupcake liners filling each 3/4 full.

  4. Step 4

    Bake at 350 degrees F for 15 minutes. Cool. Garnish with a teaspoon of cherry pie filling.

Tips & Warnings
  • You may also want to try using vanilla wafers instead of graham crackers.
  • Do not over bake the cheesecake, this will cause cracks. Once the cheesecake is finished baking let it cool at room temperature on a cooling rack for 1 hour.
  • Another way to cool the cheesecake is by turning off the oven after it is done baking and let the cheesecake sit in the oven with the oven door open for about 30 minutes.
