What better way to wake up to a nice crisp Fall day than with a hearty pancake breakfast and with Pumpkin pancakes at that!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 cup packed brown sugar
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1 large sized egg, beatin lightly
  • 1 tbsp canola oil
  • 1 cup nonfat milk
  • 1/3 cup pure pumpkin
  1. Step 1

    Mix flour, sugar, salt, baking powder, ginger, cinnamon and nutmeg together in a medium bowl.

  2. Step 2

    In a small bowl mix together oil, milk, egg and pumpkin.

  3. Step 3

    Combine wet ingredients with the dry, stirring to incorporate. Let it set for about 5 minutes.

  4. Step 4

    Cook on a greased griddle pan until sides bubble, flip and cook for 1/2 a minute.

  5. Step 5

    Serve with syrup, or fat-free cool whip.

Tips & Warnings
  • Makes 8-10 pancakes.
