Things You'll Need:
- 1 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 cup packed brown sugar
- 1/4 tsp salt
- 1/4 tsp nutmeg
- 1/2 tsp cinnamon
- 1/2 tsp ground ginger
- 1 large sized egg, beatin lightly
- 1 tbsp canola oil
- 1 cup nonfat milk
- 1/3 cup pure pumpkin

Step 1
Mix flour, sugar, salt, baking powder, ginger, cinnamon and nutmeg together in a medium bowl.

In a small bowl mix together oil, milk, egg and pumpkin.

Combine wet ingredients with the dry, stirring to incorporate. Let it set for about 5 minutes.

Cook on a greased griddle pan until sides bubble, flip and cook for 1/2 a minute.

Serve with syrup, or fat-free cool whip.
