How to Make An Easy Sweet Potato Pie With Walnut Topping.

This is a wonderful pie for any time of year.

Instructions

Things You'll Need:

  • 1 unbaked 9 inch pie crust
  • 2 large cooked sweet potatoes (at least 2 cups when mashed)
  • 3 eggs
  • 3/4 cup brown sugar
  • 1/2 cup light cream
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon nutmeg
  • scant 1/8 teaspoon salt
  • 3 tablespoons flour
  • 2 tablespoons more brown sugar
  • 2 tablespoons butter
  • 1/2 cup chopped walnuts
  • 1 1/2 cups whipping cream, whipped for topping
  1. Step 1

    Heat oven to 375 degrees.

    Mash potatoes. Set aside.

    In a smaller bowl, beat together the eggs, 3/4 cup brown sugar, 1/2 cup cream, vanilla, cinnamon, allspice, nutmeg and salt.

  2. Step 2

    Beat egg mixture into the mashed potatoes.

    Pour mixture into pie shell.

    Set aside.

  3. Step 3

    Mash together the flour, 2 tablespoons brown sugar, and two tablespoons butter.

    Stir in the walnuts and sprinkle the mixture over the potato pie.

  4. Step 4

    Bake for approximately 40 minutes or until sharp knife inserted into the centre of the pie comes out clean.

    Cool on rack.

    Serve topped with whipped cream. Enjoy!
