Originally a staple of Greece, frappes are coffee-based drinks characterized by a thick foam. They are meant to last for hours. They are usually served with a cold glass of water so the user can keep adding water to make the coffee last. The drink can be served "skeeto," or plain with no sugar, but most recipes do contain sugar.

  • 1 1/2 tsp. instant coffee
  • 2 tsp. sugar
  • Milk
  • Ice cubes
  • Shaker
  • Glass
  • Straw

Instructions

      Place 3 tbsp. of water and 1 1/2 tsp. of coffee in a shaker. Add sugar according to taste, though 2 tsp. is the norm.

      Close the shaker and shake vigorously for 30 seconds to 1 minute. The shaking should leave a foam on the frappe.

      Open the shaker and pour the foamy Greek frappe into a glass over ice.

      Fill the still-foamy shaker with tap water. Pour the water over the frappe in the glass.

      Add milk to taste. Stir and drink the frappe with a straw.
