How to Make Easy Cheesy Squash Casserole

This is a super simple squash casserole that lives up to every bit of its name. Cooking squash does not have to be boring any longer. This yellow squash recipe is easy to make, very cheesy, and full of flavor. It is also the perfect way to use up that delicious yellow squash that you have been growing all summer. It is the perfect casserole for those chilly fall and winter nights. Yields 6-8 servings.

Instructions

Things You'll Need:

  • • 6-8 medium sized yellow squash
  • • 1 can of Cream of Mushroom and Chicken soup
  • • 1 small sweet onion
  • • 2 cloves of garlic
  • • 1 small can of dried onions
  • • 1 cup of shredded cheddar cheese
  • • salt and pepper
  • 2 tbsp butter
  • casserole dish
  1. Step 1
     

    Preheat your oven to 350 degrees. While the oven is preheating spray your casserole dish with nonstick spray. This will keep the casserole from sticking to the dish and it will help with cleanup too.

  2. Step 2
     

    Slice yellow squash into 1/4” slices.

  3. Step 3
     

    Chop onion into small pieces.

  4. Step 4
     

    Chop three or four garlic gloves.

  5. Step 5

    Boil squash, onion, and garlic together
    until the yellow squash is tender when it is pierced with a fork.

  6. Step 6

    Drain the squash, onion, and garlic mixture thoroughly and place it into the casserole dish.

  7. Step 7

    Add butter, cheese, and condensed mushroom soup
    and mix thoroughly.

  8. Step 8
     

    Top the squash casserole with one whole can of dried onions.

  9. Step 9

    Bake at 350 for about 20-25
    minutes or until onions are
    golden brown

Tips & Warnings
  • Any of the creamy condensed soups could be used in this dish. Replace the Cream of Chicken and Mushroom with Cream of Mushroom or Cream of Celery for a vegetarian dish.
  • This dish could be made in advance and frozen or refrigerated for later use.
  • Be sure to thoroughly drain the excess water from the squash to keep the casserole from being to "soupy."
  • I like to spray my casserole dish with nonstick spray to make cleanup a little easier.
