So you've carved that Halloween pumpkin and what are you left with? Lots of pulp and plenty of seeds. If you want to save a couple of bucks and prepare a healthy snack that your family will love try this easy and quick recipe for roasting pumpkin seeds

Difficulty: Easy
Instructions

Things You'll Need:

  • 2 cups of pumpkin seeds
  • 1 TBSPN olive oil
  • Salt to taste
  • Optional spices
  1. Step 1

    Preheat oven to 300 degrees

  2. Step 2

Rinse seeds, cleaning off any major chunks of pumpkin

  3. Step 3

Toss pumpkin seeds with oil and seasonings of your choice. Some of my favorites are garlic powder, cayenne pepper, red pepper flakes, onion powder. Mrs. Dash blends are a great choice if you're watching your salt intake

  4. Step 4

Spread pumpkin seeds in a single layer on a baking sheet. Bake for 45 minutes or until golden brown. Stir occasionally

on 8/19/2009 Great advice! Pumpkin seeds are SO healthy and delicious, but costs are escalating. I also set aside seeds to dry and store for next year's gardening.
