Who doesn't like Banana Pudding made with Vanilla Wafers? So why not use the Vanilla Wafers to make a tasty, moist cake. Add a couple of mashed bananas, some instant pudding mix and you have Vanilla Wafer Pudding Cake.
You'll get many raves from this recipe. Serve it with a dollop or two of whip cream. YUMMY!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 cup butter, softened
  • 2 cups sugar
  • 6 eggs
  • 7 ounces shredded unsweetened coconut
  • 1 12 ounce package Vanilla Wafers, crushed
  • tube pan
  • 2 mashed bananas
  • 1 package instant banana pudding mix
  1. Step 1

    Preheat oven to 275 degrees. Grease a tube pan and line bottom with wax paper.
    Crush Vanilla Wafers in blender. Set aside.

  2. Step 2

    Combine butter and sugar in large bowl. Beat with electric mixer on high until light and fluffy. Add banana pudding mix.

  3. Step 3

    Add eggs one at a time to butter mixture, beating well after each addition. Add mashed bananas. Stir in coconut. Add Vanilla Wafer crumbs and mix well.

  4. Step 4

    Spoon batter into prepared tube pan.
    Bake until toothpick comes out clean, about 1-1/2 hours. Cool in pan for 10 minutes. Flip onto cake plate. Cool completely. Slice and serve with whip cream.

Tips & Warnings
  • Wafers need to be ground into fine crumbs.
