How to Make Applesauce Zucchini Bread

Applesauce/zucchini bread.
It's great for gift giving.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 3 eggs, beaten
  • 1 cup oil
  • 2 cups sugar
  • 2 cups zucchini, grated, seeds removed(do not peel)
  • 3 cups all-purpose flour
  • 3 teaspoons vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 teaspoons cinnamon
  • 1/4 teaspoon baking powder
  • 1 cup applesauce
  1. Step 1

    Mix first 4 ingredients. Blend well.

  2. Step 2

    Add the rest of the ingredients. Stir well to blend.

  3. Step 3

    Pour evenly into 2 greased and floured loaf pans.
    Bake @ 350 degrees for 1 hour or until a toothpick comes out clean.

Tips & Warnings
  • Can add 1/2 cup chopped nut meats and or, 1/2 cup raisins
  • Also, can add 1 small can crushed, drained pineapple inplace of applesauce.
  • Can make in 4 mini pans, cut down on baking time.
