If you're lucky enough to be able to shop Trader Joe's, I'll give you the ingredients to pick up and have on hand to make an even quicker, more gourmet version of my easy burrito-in-a-bowl. On those nights when you just don't want to cook, you'll thank me.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 pkg of cooked Carnitas, or Grilled Chicken (choose from Strips, Lemon Pepper, Plain,
  • Balsamic & Rosemary Chicken Breast) or other cooked meat from their refrigerated section)
  • 1 pkg ready-to-eat salad or lettuce mix
  • 1 can Organic black or pinto beans
  • 1 box of Organic Brown or White Rice in the freezer section
  • 1 jar Corn And Chili Tomato-less Salsa
  • Your favorite tomato- based salsa (they have many to choose from)
  • 1 container of Cilantro And Chive Yogurt Dip or Sour cream
  • 1 pkg Mexican blend shredded cheese
  • 1 pkg guacamole
  • Cereal-sized bowl
  • Fork
  1. Step 1

Cook the package of frozen rice in the microwave for 3 minutes, as instructed on the box.

  2. Step 2

Heat the beans in the microwave or on the stovetop.

  3. Step 3

Heat the meat according to package direction. (Most microwave in under 2 minutes.)

  4. Step 4

Wash, dry and shred lettuce, if not ready to eat.

  5. Step 5

Layer ingredients in your bowl, starting with rice, beans, meat and topping with the condiments of your choosing.

  6. Step 6

    Ready to eat! Enjoy.

Tips & Warnings
  • Trader Joe's ingredients have a shelf life of a few days. Buy ingredients and save for the night you don't want to cook and don't want to eat takeout.
  • Make it vegetarian by leaving out the meat.
